Beef and Blue Cheese Wraps

These wraps offer a nutritious alternative to a fast-food lunch. Ready in just 20
minutes, how can you say no?
3 tablespoons mayonnaise
1 teaspoon dried thyme, crushed
2 tablespoons yellow mustard
4 8-inch flour tortillas
12 ounces thinly sliced roast beef
1 12-ounce jar roasted red peppers, drained
1/3 cup crumbled blue cheese, plus more for garnish
4 cups mixed greens
Olive oil for drizzling (optional)
1. Stir together mayonnaise and thyme in a small bowl. Set aside 1 tablespoon of the mayonnaise mixture. Stir mustard into remaining mixture.
2. Spread mayonnaise-mustard mixture evenly over tortillas. Top evenly with roast beef,
roasted peppers and blue cheese. Roll up tortillas; brush with reserved 1 tablespoon
3. Cook wraps in a large skillet over medium heat for about 2 minutes per side or until
light brown. Cut wraps in half. Divide greens among salad dishes. Drizzle olive oil and
sprinkle additional blue cheese over greens, if desired; top with halved wraps.
