Carrot Spice Bars

Children and grownups will love these sweet treats! Splurge with some cream-cheese
frosting, if you wish.
3/4 cup whole-wheat flour
3/4 cup rolled oats
1/2 cup unbleached all-purpose flour
1 teaspoon baking powder
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
3 large egg whites, lightly beaten
2 cups finely shredded carrots
3/4 cup packed brown sugar
1/2 cup canola oil
1/4 cup honey
1 teaspoon vanilla extract
1/2 cup pecans, chopped and toasted
Sifted confectioners' sugar for dusting
1. Preheat oven to 350°F. Line a 13-by-9-inch baking pan with foil, allowing foil to extend
over edges of pan. Lightly coat the foil with cooking spray; set aside.
2. In a large bowl, stir together whole-wheat flour, oats, all-purpose flour, baking powder,
ginger, cinnamon, baking soda and salt. In a medium bowl, stir together egg whites,
carrots, brown sugar, oil, honey, vanilla and pecans. Add the carrot mixture to the flour
mixture, stirring just until combined. Spread batter in the prepared pan.
3. Bake until a wooden toothpick inserted near the center comes out clean, about 25
minutes. Cool in the pan on a wire rack. Use foil to lift the uncut bars from the pan. To
serve, sprinkle with confectioners' sugar and cut into bars.
