Caprese Stuffed Cherry Tomatoes

This bite-size take on Caprese salad features cherry tomatoes filled with cubed mozzarella
and fresh basil. An ideal party snack!
24 cherry tomatoes
4 ounces part-skim mozzarella cheese
2 tablespoons snipped fresh basil
1 tablespoon white balsamic vinegar
¼ teaspoon ground black pepper
1. Using a sharp knife, cut off the top third of each cherry tomato (on the stem end).
Hollow out the cherry tomatoes; invert on paper towels to drain. Set aside.
2. Cut the mozzarella into 24 equal cubes. In a medium bowl, combine the cheese cubes,
basil, vinegar and pepper. Stuff each tomato with a coated cheese cube.
