Lemony Cod with Asparagus

Mild, tender cod gets some zing from fresh-squeezed lemon juice. Fresh spring asparagus
and breadsticks round out the meal.
4 prepared soft breadsticks
2 tablespoons butter, melted, divided
1/4 teaspoon garlic salt
1 pound fresh or frozen cod fillets (½-inch thick)
12 ounces asparagus spears, trimmed
1 tablespoon lemon juice
½ teaspoon dried thyme, crushed
⅛ teaspoon ground black pepper
Lemon wedges (optional)
1. Preheat broiler. Place breadsticks on the unheated rack of a broiler pan. Brush with 1
tablespoon melted butter and sprinkle with garlic salt. Broil 4 inches from heat for 1 to 2
minutes or until golden, turning breadsticks once. Remove from pan and keep warm.
2. Arrange fish and asparagus in a single layer on the broiler pan rack. In a small bowl, stir
together the remaining 1 tablespoon butter and lemon juice. Drizzle butter mixture over
fish and brush over asparagus. Sprinkle fish and asparagus with thyme and pepper.
3. Broil 4 inches from heat for 4 to 6 minutes or until fish flakes easily when tested with a
fork and asparagus is crisp-tender, turning asparagus once. Serve fish and asparagus with
breadsticks and, if desired, lemon wedges.
