Basil-Tomato Chicken Skillet

This nutritious skillet supper packs in over half a pound of spinach—and it’s done in only
1-11/4 pounds chicken tenders
⅛ teaspoon salt
⅛ teaspoon ground black pepper
1 14.5-ounce can no-salt-added diced tomatoes, drained
1/4 cup snipped fresh basil
1 9- to 10-ounce package prewashed spinach
2 tablespoons finely grated Parmesan cheese
1. Cut any large chicken tenders in half lengthwise. Coat a 12-inch skillet with cooking
spray; heat over medium-high heat.
2. Add the chicken to the pan; cook and stir until cooked through, about 5 minutes. Sprinkle
with salt and pepper.
3. Add tomatoes and basil to the pan; heat through. Remove from heat. Add spinach; toss
until wilted. Divide among 4 plates. Sprinkle with Parmesan.
