Coffee-Crusted Beef Tenderloin

TO MAKE AHEAD: Prepare as directed through Step 2. Cover and refrigerate for up to 24
hours. Continue as directed in Steps 3 and 4.
Coffee lovers, this one’s for you: a rich-tasting tender roast that’s perfect for entertaining. Make a few batches of this rub recipe, package it into small jars and give as gifts for
your dinner guests to take home.
2 tablespoons finely ground coffee beans
1 tablespoon packed brown sugar
11/2 teaspoons garlic powder
11/2 teaspoons paprika
3/4 teaspoon kosher salt
3/4 teaspoon ground black pepper
1 4-pound center-cut beef tenderloin roast
1. Preheat oven to 425°F. Line a large rimmed baking sheet with heavy foil. Place a rack in the
pan and coat it with cooking spray; set pan aside. In a small bowl, stir together ground coffee,
brown sugar, garlic powder, paprika, salt and pepper; set aside.
2. Trim fat from roast. Place meat on the rack in the prepared baking pan. Sprinkle coffee
mixture evenly over top and sides; rub in and press lightly with your fingers.
3. Roast, uncovered, for 50 to 60 minutes or until an instant-read thermometer inserted in
the center registers 135°F for medium rare. Remove from oven.
4. Cover roast with foil; let stand for 15 minutes before slicing into 1/2-inch-thick slices. ( The
temperature of the meat after standing should be 145°F.)
